Chorizo Breakfast Recipe

  • 1 LB. Chorizo
  • 2 Potatoes diced
  • 3 Eggs
  • Cilantro
  • Salt and pepper to taste

Here are the directions:

  1. You will start by cooking your chorizo or what you have. You can use sausage, what you have on hand will work. (I used 2 chorizos)
  2. Take out your chorizo and add a little oil to your pan ( my chorizo did not have much rendering fat, I used a little oil. If the sausage or chorizo you are using has a lot of rendering fat, do not add the oil)
  3. Add your diced potatoes
  4. Cook until tender
  5. Add your chorizo back to your skillet
  6. Add your cheese
  7. Cover until your cheese is melted
  8. Add your eggs ( you can add your eggs scrambled or just as is, out of the shell)
  9. Cover with lid if you are adding your eggs as is from the shell
  10. Cook egg to your desired preference
  11. Add cilantro

I like to add some sliced avocado with homemade flour tortillas.

You add what you and your family like. You can enjoy this recipe with bread if you do not have flour tortillas.

This is also a great filling for breakfast burritos. You can make ahead.
