This recipe is as easy as you want it to be. Start by using what you already have in your pantry. I made my own chile rojo today, you use what you have. If you have red salsa you bought already made use that. As I always say make it your own and add as many or as little ingredients that fit with your lifestyle.
Here are your ingredients
- 4 Chile Guajillos
- 2 Chile De Árbol
- 1 Garlic Clove
- 1 Chicken Bouillon
- 1 Cup Chicken Stock
- Corn tortillas
- Mozzarella Cheese Grated
- Cilantro
- Sour cream
- Eggs
Directions
Chile Rojo:
- Wash you chiles
- Boil in water
- Add your chiles, garlic, chicken bouillon, and chicken stock to your blender
- Blend for 1-2
- Bring to a pan and simmer on low heat
You do not need to add any salt since you added the chicken bouillon and are using bacon.
*If you taste salsa and it is to spicy add 1 TSP honey. I like it semi spicy since I have a little one. You make it as spicy as you want it.
- Cook bacon
- Cook egg sunny side up
- Place your corn tortilla in hot skillet with oil
- Cook until nice and golden
- Add to Chile rojo
- Place tortilla on plate
- Add your grated cheese
- Repeat until desired amount
- Top with cheese, egg, bacon, sour cream, and cilantro

Boil chiles 
Simmer 
Cook tortilla, add to salsa, and plate
I usually fill my enchiladas with shredded chicken, diced carrots, and diced potatoes. You can change it up or make it basic as I did today. Work with what you have, make it easy and enjoy it!
