Serves 4
I have a little something on the healthier side today! Trust me you and your family will still enjoy it.

Here are the ingredients:
For the chicken: (Marinate for 2 hours if you can, if you are unable to don’t worry)
- 1/4 Cup White Vinegar
- 1 Lemon (juice)
- 1 Sazón Con Culantro and Achote
- Lemon pepper to your taste
- Adobo to your taste
Spinach and Kale Salad ingredients:
- Spinach
- Kale
- Cabbage
- Red Onion
- Mango diced
- 1/4 Parmesan Cheese grated (I use fresh parmesan. You can use what you have)
- Avocado (optional)
- 1/4 Cup Pecans
- 1/4 Cup Raisins
- 1/4 cup Cranberries
*I did not measure the kale nor spinach, I will leave it to you on how much you would like to add. If you are using a bag I would do 1/2 a bag of both.
I also have a homemade vinaigrette if you guys are interested, here are the ingredients:
- 2 TBS Mango Juice (Mango purée works out too or you can blend some in your blender. Use what you have)
- 1/4 Cup Avocado Oil (If you are not use to the avocado oil, you can use olive oil)
- 2 TBS Red Wine Vinegar
- 1 TSP Italian Seasoning
- Salt and Pepper to your taste
Directions on marinating your chicken:
- Combine all your ingredients together.
- Marinate in your refrigerator for about 2 hrs.
You can decide to grill it outside while the kiddos are playing or if you don’t have that option you can cook it on your stove top. What works best for you.
Spinach and Kale Salad:
- Combine all your ingredients together. I used fresh kale, you can leave off the stems, up to you.
- Top it off with what you like. I used pecans, cranberries, diced mangos, and fresh parmesan cheese.
Use what you have. I am here to give you my recipes and share my ideas with you. It makes me so happy when you take my recipe and add a little bit of you to it. Add what you have in your home and what you like. Escape for a little while and enjoy it, specially how things are out there right now with the virus, riots, and just in general where time is right now.
Mango vinaigrette ingredients:
- Combine all your ingredients together. Remember if you are not use to avocado oil use what you like.
- Shake well
- Store in your refrigerator until you are ready to serve.
You can always add your favorite salad dressing if you like. I hope you enjoy this recipe as much as I did.
