Are you looking for and easy recipe that has no meat and is easy to clean up afterwards? I have been looking around here and there trying to find an easy recipe that would be worthy enough for my picky family to want to try.

I came across a recipe online and it gave me a great idea. I have always loved to eat lentils growing up, it was one of my favorite grains to eat, I would always ask to eat them as well as potatoes. This brought me to an idea of using lentils to my everyday meals or at least figuring out what else I can create and bring to my dinner table that all will like and enjoy.

This recipe is a mixture of lentils and a great all time favorite recipe combined together that they will all love.

Let’s dive right into the ingredients and recipe.

You will need:

  • 2 Tbsp. Oil
  • 1 Cup Lentils
  • 1 Onion diced
  • 3 Garlic minced
  • 1 Bell pepper diced
  • 1 Tsp. A1 Sauce
  • 1 Cup Broth
  • 1 Cup Tomato sauce
  • 1/2 Cup Ketchup
  • 3 Tbsp. Tomato paste
  • 2 Tbsp. Brown Sugar
  • 1 Tsp Chile Powder
  • 1/2 tsp Ground Mustard
  • 1 Tbsp. Apple Cider Vinegar
  • I Cup Water
  • Salt & Pepper to taste

Lets bring it all together

  1. In a warm skillet add oil, peppers, and onions. Cook for 5-8 minutes until veggies are tender. In go the water, lentils, broth, and garlic.
  2. Bring to a simmer and cover for 25-30 min. Keep an eye on them making sure water does not reduce all the way. Add more water if needed until lentils have reached a tender feel (not mushy)
  3. After lentils are ready and tender, go ahead and mix in tomato sauce, paste, and combine well. Mix in brown sugar, chili, mustard, cider, and water. simmer for 10-15 min on a med/low heat. Lastly, taste for salt and pepper.

Enjoy with your favorite toppings as well as your favorite vegan hamburger bread or a a rice patty, the options are endless.
