For this recipe you will be using ingredients you would already have in your kitchen. I really enjoy this recipe due to its simplicity. Not only is this a simple recipe, this recipe is delicious!

There have been many times when I make this recipe at home and I choose to eat it just as it is. Let’s gather our ingredients:

  • 1 Can Small Red Beans (15oz.)
  • 1/2 Squash\Pumpkin diced
  • 1-2 Tbsp Sofrito
  • 1 Tbsp Oil
  • 1 Pk Sazón con Culantro & Achote
  • 1 Pk Sazón Ham
  • 1/2 Can Tomato Sauce
  • 1 Tsp Oregano
  • 1 Tsp Cumin
  • 1-2 Tbsp Olives with Pimentos
  • 1 potato diced
  • 1 5 Oz. Can Salchichas Carmela Con pique
  • 1 Handful Cilantro
  • 1 Cup Water

Let’s get to cooking

  1. Start by placing oil in a warm pot. Take sofrito and cook for about 1-2 minutes on medium heat.
  2. Take Ham seasoning add it with the sofrito. Mix until well incorporated. Go ahead and add the seasoning packet.
  3. In with the tomato sauce. Mix, mix, mix. Add your cumin and oregano. Mix. In go the beans. Mix. Add pumpkin, sausage, potato, cilantro, mix.
  4. Lastly, add water and taste for salt.

Note: When it starts to boil reduce heat to a low heat about a 1-2 (for electric stoves) and let it simmer.

Arroz Con Gandules

Rice with Pigeon Peas

Cooking Time: 30-45 Minutes

Serves 4+

Simple Cooking | 30 Minute | Kid Friendly

Let’s gather our ingredients:

  • 2 Cups Rice (preferably Arroz Rico)
  • 2 Cups Water
  • 2 Tbsp Sofrito (https://abuscafe.food.blog/2021/03/03/sofrito/ )
  • 1-2 Tbsp Oil
  • 1-2 Tbsp Spanish Olives with Pimentos
  • 1 Pk Ham Seasoning
  • 1 Pk Sazón con Culantro y Achote
  • 1 Can Gandules (15oz.)

*Note: Salt is to taste as well as adding cubed ham.

Let’s get to cooking:

  1. Add oil to a caldero/cauldron. In with the sofrito ( https://abuscafe.food.blog/2021/03/03/sofrito/ ) mix cook for 1-2 min. Place ham seasoning, mix well. Take sazón mix until well combined.
  2. Take can of gandules with liquid. Add to mixture, let it simmer for 4-5 min. In go the olives.
  3. Proceed with the rice, mix until well combined. Add water, stir, and taste for salt to your liking.
  4. Simmer until water has reduced, mix, and cover for 25-30 min. Stir and enjoy

Note: When it starts to boil and water is almost reduce to nothing mix and reduce heat to a low heat about a 1-2 (for electric stoves)

You will COVER with lid and let it sit for 20-25 min without opening lid.

After 20-25 min take a fork and fluff the rice.

Meatless Sloppy Joes

“Eat the plants, not the meat”

Are you looking for and easy recipe that has no meat and is easy to clean up afterwards? I have been looking around here and there trying to find an easy recipe that would be worthy enough for my picky family to want to try.

I came across a recipe online and it gave me a great idea. I have always loved to eat lentils growing up, it was one of my favorite grains to eat, I would always ask to eat them as well as potatoes. This brought me to an idea of using lentils to my everyday meals or at least figuring out what else I can create and bring to my dinner table that all will like and enjoy.

This recipe is a mixture of lentils and a great all time favorite recipe combined together that they will all love.

Let’s dive right into the ingredients and recipe.

You will need:

  • 2 Tbsp. Oil
  • 1 Cup Lentils
  • 1 Onion diced
  • 3 Garlic minced
  • 1 Bell pepper diced
  • 1 Tsp. A1 Sauce
  • 1 Cup Broth
  • 1 Cup Tomato sauce
  • 1/2 Cup Ketchup
  • 3 Tbsp. Tomato paste
  • 2 Tbsp. Brown Sugar
  • 1 Tsp Chile Powder
  • 1/2 tsp Ground Mustard
  • 1 Tbsp. Apple Cider Vinegar
  • I Cup Water
  • Salt & Pepper to taste

Lets bring it all together

  1. In a warm skillet add oil, peppers, and onions. Cook for 5-8 minutes until veggies are tender. In go the water, lentils, broth, and garlic.
  2. Bring to a simmer and cover for 25-30 min. Keep an eye on them making sure water does not reduce all the way. Add more water if needed until lentils have reached a tender feel (not mushy)
  3. After lentils are ready and tender, go ahead and mix in tomato sauce, paste, and combine well. Mix in brown sugar, chili, mustard, cider, and water. simmer for 10-15 min on a med/low heat. Lastly, taste for salt and pepper.

Enjoy with your favorite toppings as well as your favorite vegan hamburger bread or a a rice patty, the options are endless.

White Rice

Fluffy Rice

20-25 Min

Quick & Simple | Vegan

Have you ever experienced issues while trying to make white rice? You follow the right measurements to the grain (get it, because rice is a grain lol) it does not seem to work at all. Look no farther, I am here to make your life in the kitchen simple and your cooking amazing.

Let’s get started, you will need

  • White rice (long | Med Grain)
  • Oil (Virgin | Canola)
  • Water
  • Salt to taste

Let’s bring it all together

Here is where it gets a little confusing; have no fear we will get through this

  1. Take 1 cup of rice and add it to your rice maker, pot, cauldron, or kaldero
  2. Add 1-2 tablespoon of oil & salt, mix until nice and combined

Note: When it starts to boil and water is almost reduce to nothing mix and reduce heat to a low heat about a 1-2 (for electric stoves)

You will COVER with lid and let it sit for 20-25 min without opening lid.

Fluff your rice after 20-25 min with a fork


You are all done and ready to serve and enjoy with your loved ones.

This fluffy white rice is also a great pair with Mushroom Stew | Guisado de Champiñones as well as my stewed beans.

Here is a little cheat, cheat you can use if you would like to make more than just one cup of rice:

1 cup of rice = 2 cups of water 
2 cups of rice = 3 cups of water
3 cups of rice = 4 cups of water
4 cups of rice = 5 cups of water

Trifongo Relleno con Camarones en Salsa de Tomate

Trifongo Stuffed with Shrimp Covered In Tomato Sauce

SERVES 5+

This recipe is a great one to have around in your weekly dinner plan. It is a very simple recipe that may look complex yet it is very simple to make. Ingredients For Tomato Sauce:

  • 2 lb. Shrimp cleaned & deveined
  • 2 tbsp. Sofrito
  • 1 tsp. Garlic Salt
  • 1/2 Onion Thin sliced
  • 1 pkt. Sazon con Culantro y Achote
  • 5 Garlic Minced

Ingredients for Trifongo:

  • 1 Yuca peeled & quartered, boiled in water until fork tender
  • 2 Plantains peeled and cut into 1 inch, placed in water with adobo
  • 2 Green Bananas/guineos verdes peeled & cut into 1 inch
  • AS NEEDED Oil for frying

Start with your shrimp & tomato sauce:

  1. In a pan add shrimp cook & remove from pan. Take thin sliced onions & garlic cook until nice & translucent; you will be able to smell the deliciousness of the garlic & onion mixture.
  2. Proceed to add sofrito including sazon packet mix until well combined.
  3. Incorporate the tomato sauce into pan, combine well. Bring shrimp back into the pan mix & taste for salt; set aside( tomato sauce can also be stored in the refrigerator for three days & can be used for other dishes & meats, just leave the shrimp out & replace with meat of your choice).

Trifongo:

  1. Heat oil in dutch oven or any fryer, place plantains in hot oil, fry until a golden brown on both sides.
  2. Continue & add green bananas fry until a nice tender feel. Place boiled yuca to fry as well.
  3. Take a pilon/mortal/anything you can use to make a mini bowl shape add yuca, plantains, & guineos at a time & smash until nice and compact. Continue on until you have desired size.

Plating:

Take trifongo place on middle of plate(you can place your trifongo as a bowl looking upwards or you can place it looking downwards(upside down)) & add delicious salpicon(a mixture of finely chopped ingredients bound in a thick sauce and used as a filling or stuffing) we have created. Top with fresh cilantro and hot sauce if you desire.

Holiday Turkey

Prep Time: 15 Minutes | Cook Time: 3-4 Hours

I have for you a recipe I use every year for the holidays or any day really. If you eat turkey all year long this is a great recipe to use. So, even if it is your first time or not join me in making this delicious turkey that will have everyone wanting left overs and maybe even taking some home with them leaving you with less clean up.

Here in our home we eat turkey once a year on Thanksgiving Day. It is our tradition to cook a delicious feast which includes of a delicious turkey, rice with pigeon peas, Ensalada De Papa | Potato Salad, Ensalada De Coditos | Macaroni Salad, and much more. Every year we may change our sides, one of them is not our turkey that is a fact, every year it is my duty to make sure our turkey is well seasoned with lots of flavor and love.

So, how about we set up in the kitchen and gather our ingredients and start the process so you can see what I mean when I say, “this is a delicious turkey and everyone will keep asking for more”.

Let’s get right in and start to marinate our turkey and getting it ready for the warm oven.


Let’s gather our ingredients.

  • 21 LB. Turkey
  • 1/2 Stick Butter
  • 2 Packets Sazon
  • 1 TBSP Adobo
  • 1 TBSP Oregano
  • 1/2 TSP Cumin
  • 8 Garlic
  • 4 TBSP Olive Oil
  • 1 TBSP Salt
  • 1 TBSP Pepper
  • 2 TBSP Vinagar
  • 1 Bunch Cilantro
  • 1 Green Bell Pepper Onion
  • 1 Bunch Culantro
  • 1 Onion

Let’s Start To Marinate:

  1. Place garlic, oil, and vinegar in molcajete/mortal (If you do not have a mortal/molcajete you can use blender/ food process) smash garlic
  2. Take adobo, sazon, oregano, cumin, salt, and pepper, add to garlic mixture
  3. Spread mixture all over the turkey
  4. Cut up butter into squares
  5. Lift skin up, tuck butter between turkey breast and skin
  6. Quarter bell peppers, onion, tear cilantro, culantro, and smash garlics
  7. Insert cut up veggies into the turkeys body cavity
  8. Mark X’s with knife, all around turkey and insert garlics

You are all done and ready to marinate your turkey over night which is what I do.


Let’s Cook:

After you marinate your turkey over night you can now set your oven to pre-heat to a 350’F/177’C which is set at a moderate heat.

I cook 3-4 hours or until it reaches a temperature of 165’F/74’C all around turkey.


We are all done and ready to enjoy!

I am so excited, you are back here for more easy and delicious recipes from mi casita to your casita!

Today we will be reading a little about our famous hash dish. From all the research I have done I have come to learn there are many ways we have been taught to make this quick and easy dish. Every country has different recipes and so do our states here in America.

A little research on todays dish:

Hash is a dish which has chopped meat, potatoes, and onions. According to my research from: https://en.wikipedia.org/wiki/Hash_(food)#:~:text=Hash%20is%20a%20culinary%20dish,house%22%20or%20%22hashery.%22 It states Hash originated as a way to use leftovers. In the 1860’s cheap restaurants were called, “Hash Houses” or “Hashery”. During the Second World War hash had started to get popular in different countries such as Britain, France, and the U.S.A. due to having to ration food, specially fresh meat.

If you look online there are so many different recipes to make hash, It is so great and easy!

Now, why don’t we jump right in.

Here are my ingredients:

  • 1 LG Potato
  • 1 Tomato diced
  • 1/2 Poblano Pepper diced
  • 1/2 Onion diced
  • 1 TBS Oil
  • 1 7oz. Can Spam or 1/2 of 12oz. can
  • Salt & Pepper to taste

Lets get to cooking:

  1. Dice and prep all your ingredients
  2. Heat your pan and add your oil
  3. Add your diced potatoes, cook until nice and tender
  4. When your potatoes are tender add salt & pepper to your taste. Quick note: Spam has salt, taste before you add your salt.
  5. Add your diced spam
  6. Add your diced tomato, poblano peppers, and onions. Cook until your veggies are nice and tender
  7. If you are making a breakfast hash add your scrabbled eggs now

Here you have it a quick and easy hash made with delicious tender veggies and a simple can which is spam. I always say, ” work with what you have”.
