Frijoles Charros

(Cowboy beans)

Serves 6


Charro beans are a dish originated from the Northern side of Mexico. It is a big pot of deliciousness, it is a broth made from slow cooked onions, tomatoes, jalapeños and other ingredients listed below.

This recipe is made with fresh pinto beans. The way things are now you might have canned pinto beans hiding in your pantry and let me tell you those are great too. Don’t you worry, you use what you have available.

Lets jump right in.

Ingredientes:

  • 1 Tomato
  • 1 Onion
  • 1 Jalapeño
  • 3 Springs of Cilantro
  • 2 Cups Chicharrón (pork skins)
  • 5 Bacon Slices
  • 1 pk Sazón con Culantro & Achote
  • 8 oz. Cooked Ham
  • 19.75 oz. Can Pinto Beans

Lets get to cooking:

  1. Dice your veggies, set aside
  2. Dice your bacon, ham, & chicharrón
  3. Cook your bacon until nice and brown
  4. Add your ham
  5. Cook ham for 2-3 min.
  6. Add onion and poblano pepper, cook untill onions are tender
  7. Add tomato, cook for 5 min
  8. Add your pinto beans with liquid
  9. Add sazón
  10. You can add chicharrón now
  11. Add water and taste for salt and pepper
  12. Cover and simmer for 10 min until chicharrón is nice and tender

Banana Bread

*Prep: 15 Min *Cook: 1hr 15min

Makes: 1 loaf

I love to make banana bread, it makes the house smell so great! You can add other flavors to it. Banana bread is also very easy to make, you can prep ahead. You can even gift this to your loved ones that includes the kiddos too, how exciting! All they would need is to add wet ingredients.

A little history on Banana bread:

According to my research and easybananabreadrecipes.com/history-banana-bread it is stating the first banana bread recipe came from America at the end of the 18th century. Historians say, “banana bread came from the great depression around 1930’s. The first banana bread was published in 1933 in “Balanced Cookbook” By Mary Ellis Ames, Director of the Pillsbury Cooking Service. Not many ingredients were used before due to the great depression and there were a lot of families who had very low income.

Now, lets get to cooking:

Ingredients

  • 2 Cups All Purpose Flour
  • 1 1/4 Cup Cane Sugar
  • 1/2 Cup Canola Oil
  • 1/2 Cup Chocolate Chips
  • 2 Eggs
  • 3 Banana (ripe)
  • 1 TSP Vanilla Extract
  • 1 TSP Baking Soda
  • 1 TSP Salt

Directions

  1. Preheat oven to 425’F
  2. Combine flour, salt, and baking powder
  3. Combine wet ingredients sugar, eggs, oil, and vanilla
  4. Mash your bananas
  5. Add to wet ingredients, combine well
  6. Mix all ingredient together
  7. Add chocolate chips
  8. Coat a 9×5 loaf pan
  9. Bake for 40-60 min at a 350’F
Quick Note:
*I freeze bananas in freezer until I am ready to use
*You can also substitute baking soda with 3 tsp baking powder
*You can also mash bananas ahead
*Omit chocolate chip if you do not want to add them 

Carne Deshebrada

*Prep: 10 min* Cook: 1-1 hr 30 min

Today’s recipe is shredded beef. This beef is great with so many dishes. You can make tortas, burritos, sliders and many more

Ingredients

  • 1 LB. Carne Para Deshebrar (round eye, if you can’t find any)
  • 1 Onion quartered
  • 1 Tomato quartered
  • 2 garlic peeled and smashed
  • 1/4 cup cilantro
  • Salt
  • Water

Directions

  1. Add cilantro, tomato, garlic, & onion to water
  2. Add beef & salt, cook for 1-1 hr 20 min
  3. Shred your beef, reserve stock
  4. Return shredded beef back to pot; salt & pepper to taste

Sudado de Pollo My Way

Here we have a Colombian dish, Sudado de Pollo it is a version of a chicken stew. It is very delicious and a one pot meal. Thru the years of me cooking this dish, I have added a few other ingredients and seasoning that fit best with my family and I.

Let’s get to cooking

Ingredients:

  • 1 lb. Chicken drumsticks
  • 2-3 Cups water
  • 2 Garlic minced
  • 1/2 onion diced
  • 1 Tsp Cumin
  • 1 Pimento moron slices
  • 1 Roma Tomato diced
  • 1 Chicken bouillon
  • 1 pk Sazón con Culantro y Achote
  • Salt & pepper
  • Cilantro
  • Potato quartered
  • Malanga opcional
  • Oil

Directions:

  1. Add your oil, pimento, and onion. Cook until translucent
  2. Add tomatoes and garlic. Cook for 4-5 min
  3. Add chicken, bouillon, sazón, cumin, water, salt and pepper
  4. Cover and cook for 25-30 min
  5. Add your malanga, potatoes, and cilantro
  6. Cook 30 mins, until your potatoes and malanga are fork tender

Budín My Way

The day I met my husband and mother-in-law a lot of ways in my life changed. They had little and were so happy, in my family we had a lot maybe even more than we needed and we were sad. I would walk with a smile, deep down I was heartbroken, hurt, and sad.

I would always observe, every time someone would visit my mother-in-laws house, she would always greet them with a coffee and what she had available. I thought that was such a great gesture. They would laugh, drink coffee, eat toast, and talk about life. To me that is something I wanted in my future, it felt so genuine and inviting.

From then on when ever someone would come over my house, I would offer them coffee, drink, anything I had available at home to drink and have them feel welcomed.

It was true, that did make a change all my visitors would always leave and say my house feels so cozy and comforting as if my home was a B&B. I haven’t changed and my future shows a lot of more things to come for my family, friends, and myself.

Ingredients

  • 12 Slices Bread (1 loaf of bread)
  • 1 Cup Milk
  • 1 Can Coconut Milk
  • 1/2 Cup Raisins
  • 1/4 Sugar
  • 2 Eggs
  • 1 TSP Vanilla
  • 1 TSP Rum

Directions

  1. Preheat your oven to 350 F
  2. Break apart bread in little pieces
  3. Add all your ingredients and combine well
  4. Bake for 1 hr and 20min
  5. Insert a toothpick if it comes out clean it is ready
  6. Drizzle with caramel and let rest until cool

  • 1 lb. Ground Beef Chuck
  • 4 Radish quartered
  • 1 Onion
  • 1 Tomato quartered
  • 1 Sazón con Culantro and Achote
  • 2 Potatoes quartered
  • 2 Carrots thick slices
  • 3 Garlic Cloves
  • 2 Corn Cobbs (split in halves)
  • Cabbage
  • Cilantro
  • Salt and Pepper to taste
  1. Bring water to a boil
  2. Make your meatballs: 1/2 of onion diced, minced garlic, sazón packet, garlic salt, salt, and pepper
  3. Add carrots, radish, 1/2 onion cut in halves, tomato quartered, corn, salt, and pepper to taste
  4. Add your meatballs
  5. 10 min before cooking time is over add cabbage and potatoes
  6. Cook for 25-30 min until meatballs are nice and done

Before we start I wanted to tell you a little about refried beans. Refried beans are a dish or side of cooked and mashed beans. Pinto beans are a very popular bean to use in this recipe. Refried beans are also used in other Latin American country households not just Mexico. Join me and let’s cook some homemade refried beans.

Ingredients

  • 1 Can Pinto beans
  • 1 Packet Sazón cilantro con culantro y achiote
  • 1 Jalapeño diced
  • 1 Tomato diced
  • 1/2 Onion diced
  • 1/2 Cup Water
  • 1 Tbs Oil
  • Pinch of Salt

Let’s get to cooking

  1. Heat up your skillet and add your oil
  2. Add onions, jalapeños, and tomatoes
  3. Cook until nice and tender
  4. Add beans and sazón packet mix until combined
  5. Add water
  6. Bring it to a boil, then simmer on a low heat until thicken to your preference

As you know, I love to share with you a little history or benefits about the ingredients I will be using in my recipe. So, the breakfast burrito which started catching on around 1975, found its way into mainstream fast food restaurants like McDonald’s, Sonic, and Hardee’s by the 1990s. The burrito originated from Mexico State. They say a guy name Juan would go out and sell on his donkey. (spanish translation burro)

Hey guys! As you all know I am very excited to start this journey and I hope you guys will also be with me. I love to cook and feel that is how I share my love. To try new things is something I learned with time. I wasn’t always open on trying new things little did I know I would fall in love with all ingredients, cuisine, different family traditions, different cultures, and many more to mention. La Tia Luz y Su Chile Con Queso

Serves 4

This recipe is easy and delicious. I love this Chile con queso I use as a side. This recipe came from one of my aunts! She would make this and every time I make it, it takes me back to a nice homey memory.

I also pair this dish with homemade flour tortillas. You can use anything you have at home, make it as easy and delicious as you like.

Here are the ingredients:

Chile con queso

  • 2 Tbs Oil
  • 2 Jalapeños diced
  • 1 Tomato diced
  • 1/2 Onion diced
  • 1 Cup Milk
  • 1 1/2 Cups of Cheese or to your liking. I use Mozzarella Cheese.

Directions:

  1. Add your oil. Set stove on medium heat.
  2. Add diced jalapeños, onions, and tomato. Let cook for about 3 minutes be sure to keep an eye on it, you don’t want it to burn.
  3. You will be adding your milk now. Add to your liking, if you don’t like it saucy don’t add all the milk.
  4. Add your salt to taste.(Remember depending on the cheese you are using, cheese does contain salt)
  5. Let it simmer on low heat for 5 minutes stirring occasionally. (It tends to foam up a little so, keep an eye on it)
  6. Lastly, add your cheese. (If you like it cheesy add more cheese or less it is up to your liking)
