Arroz Con Gandules

Rice with Pigeon Peas

Cooking Time: 30-45 Minutes

“Easy & Delicious, From Mi Casita To Your Casita”

Serves 4+

Simple Cooking | 30 Minute | Kid Friendly

Let’s gather our ingredients:

  • 2 Cups Rice (preferably Arroz Rico)
  • 2 Cups Water
  • 2 Tbsp Sofrito (https://abuscafe.food.blog/2021/03/03/sofrito/ )
  • 1-2 Tbsp Oil
  • 1-2 Tbsp Spanish Olives with Pimentos
  • 1 Pk Ham Seasoning
  • 1 Pk Sazón con Culantro y Achote
  • 1 Can Gandules (15oz.)

*Note: Salt is to taste as well as adding cubed ham.

Let’s get to cooking:

  1. Add oil to a caldero/cauldron. In with the sofrito ( https://abuscafe.food.blog/2021/03/03/sofrito/ ) mix cook for 1-2 min. Place ham seasoning, mix well. Take sazón mix until well combined.
  2. Take can of gandules with liquid. Add to mixture, let it simmer for 4-5 min. In go the olives.
  3. Proceed with the rice, mix until well combined. Add water, stir, and taste for salt to your liking.
  4. Simmer until water has reduced, mix, and cover for 25-30 min. Stir and enjoy

Note: When it starts to boil and water is almost reduce to nothing mix and reduce heat to a low heat about a 1-2 (for electric stoves)

You will COVER with lid and let it sit for 20-25 min without opening lid.

After 20-25 min take a fork and fluff the rice.

Holiday Turkey

I have for you a recipe I use every year for the holidays or any day really. If you eat turkey all year long this is a great recipe to use. So, even if it is your first time or not join me in making this delicious turkey that will have everyone wanting left overs and maybe even taking some home with them leaving you with less clean up.

Here in our home we eat turkey once a year on Thanksgiving Day. It is our tradition to cook a delicious feast which includes of a delicious turkey, rice with pigeon peas, Ensalada De Papa | Potato Salad, Ensalada De Coditos | Macaroni Salad, and much more. Every year we may change our sides, one of them is not our turkey that is a fact, every year it is my duty to make sure our turkey is well seasoned with lots of flavor and love.

So, how about we set up in the kitchen and gather our ingredients and start the process so you can see what I mean when I say, “this is a delicious turkey and everyone will keep asking for more”.

Let’s get right in and start to marinate our turkey and getting it ready for the warm oven.


Let’s gather our ingredients.

  • 21 LB. Turkey
  • 1/2 Stick Butter
  • 2 Packets Sazon
  • 1 TBSP Adobo
  • 1 TBSP Oregano
  • 1/2 TSP Cumin
  • 8 Garlic
  • 4 TBSP Olive Oil
  • 1 TBSP Salt
  • 1 TBSP Pepper
  • 2 TBSP Vinagar
  • 1 Bunch Cilantro
  • 1 Green Bell Pepper Onion
  • 1 Bunch Culantro
  • 1 Onion

Let’s Start To Marinate:

  1. Place garlic, oil, and vinegar in molcajete/mortal (If you do not have a mortal/molcajete you can use blender/ food process) smash garlic
  2. Take adobo, sazon, oregano, cumin, salt, and pepper, add to garlic mixture
  3. Spread mixture all over the turkey
  4. Cut up butter into squares
  5. Lift skin up, tuck butter between turkey breast and skin
  6. Quarter bell peppers, onion, tear cilantro, culantro, and smash garlics
  7. Insert cut up veggies into the turkeys body cavity
  8. Mark X’s with knife, all around turkey and insert garlics

You are all done and ready to marinate your turkey over night which is what I do.


Let’s Cook:

After you marinate your turkey over night you can now set your oven to pre-heat to a 350’F/177’C which is set at a moderate heat.

I cook 3-4 hours or until it reaches a temperature of 165’F/74’C all around turkey.


We are all done and ready to enjoy!
