The day I met my husband and mother-in-law a lot of ways in my life changed. They had little and were so happy, in my family we had a lot maybe even more than we needed and we were sad. I would walk with a smile, deep down I was heartbroken, hurt, and sad.

I would always observe, every time someone would visit my mother-in-laws house, she would always greet them with a coffee and what she had available. I thought that was such a great gesture. They would laugh, drink coffee, eat toast, and talk about life. To me that is something I wanted in my future, it felt so genuine and inviting.

From then on when ever someone would come over my house, I would offer them coffee, drink, anything I had available at home to drink and have them feel welcomed.

It was true, that did make a change all my visitors would always leave and say my house feels so cozy and comforting as if my home was a B&B. I haven’t changed and my future shows a lot of more things to come for my family, friends, and myself.

Ingredients

  • 12 Slices Bread (1 loaf of bread)
  • 1 Cup Milk
  • 1 Can Coconut Milk
  • 1/2 Cup Raisins
  • 1/4 Sugar
  • 2 Eggs
  • 1 TSP Vanilla
  • 1 TSP Rum

Directions

  1. Preheat your oven to 350 F
  2. Break apart bread in little pieces
  3. Add all your ingredients and combine well
  4. Bake for 1 hr and 20min
  5. Insert a toothpick if it comes out clean it is ready
  6. Drizzle with caramel and let rest until cool

Nubia’s Refried beans

Hey guys, welcome back! I always get so excited to have you back.

Before we start I wanted to tell you a little about refried beans. Refried beans are a dish or side of cooked and mashed beans. Pinto beans are a very popular bean to use in this recipe. Refried beans are also used in other Latin American country households not just Mexico. Join me and let’s cook some homemade refried beans.

Ingredients

  • 1 Can Pinto beans
  • 1 Packet Sazón cilantro con culantro y achiote
  • 1 Jalapeño diced
  • 1 Tomato diced
  • 1/2 Onion diced
  • 1/2 Cup Water
  • 1 Tbs Oil
  • Pinch of Salt

Let’s get to cooking

  1. Heat up your skillet and add your oil
  2. Add onions, jalapeños, and tomatoes
  3. Cook until nice and tender
  4. Add beans and sazón packet mix until combined
  5. Add water
  6. Bring it to a boil, then simmer on a low heat until thicken to your preference

La Tia Luz y Su Chile Con Queso

Serves 4

This recipe is easy and delicious. I love this Chile con queso I use as a side. This recipe came from one of my aunts! She would make this and every time I make it, it takes me back to a nice homey memory.

I also pair this dish with homemade flour tortillas. You can use anything you have at home, make it as easy and delicious as you like.

Here are the ingredients:

Chile con queso

  • 2 Tbs Oil
  • 2 Jalapeños diced
  • 1 Tomato diced
  • 1/2 Onion diced
  • 1 Cup Milk
  • 1 1/2 Cups of Cheese or to your liking. I use Mozzarella Cheese.

Directions:

  1. Add your oil. Set stove on medium heat.
  2. Add diced jalapeños, onions, and tomato. Let cook for about 3 minutes be sure to keep an eye on it, you don’t want it to burn.
  3. You will be adding your milk now. Add to your liking, if you don’t like it saucy don’t add all the milk.
  4. Add your salt to taste.(Remember depending on the cheese you are using, cheese does contain salt)
  5. Let it simmer on low heat for 5 minutes stirring occasionally. (It tends to foam up a little so, keep an eye on it)
  6. Lastly, add your cheese. (If you like it cheesy add more cheese or less it is up to your liking)
