Today I have an easy recipe which is of course delicious. As always, you know I try to make it as easy as I can for both of us.
Arroz con pollo is a dish which originates from Spain and has made its way to the Caribbean cuisine, such as Puerto Rico. This dish dates back to the Eight Century when the Moors made their way into Spain. This dish’s ingredients have changed with time due to the different regions whom have made the dish a staple in their country and in their daily cuisine. Not only have the ingredients changed, with time this dish has had its name changed with every latin carribaen place it has touched. Places such as Dominican Republic have named it locrio de pollo. How interesting I may add.
These are just some intresting thoughts and research I wanted to share with you. As you know, I always enjoy reading and sharing a little history I learned about the ingredients we will be using for our recipes.
Now, lets cook!
Here are your ingredients:
- 1+ Chicken Thighs boneless
- 1 LG Potato
- 1 TSP Oregano
- 1 TSP Sazon
- 1 TSP Adobo
- 4 Garlic cloves
- 1 Pimento roughly chopped
- 1/4 TSP Cumin
- 1/4 Cup Olives w/ pimentos
- 1/2 TSP Black Pepper
- 1/4 TSP Garlic & Onion Powder
- 2 TBSP Tomato Sauce
- 1 Cup Rice
- 2 Cups Water
- Cilantro
Directions:
- Cut chicken thighs in bite size pieces then season chicken with 1 tsp adobo, 1/4 tsp cumin, 1/4 tsp oregano, 1/2 tsp black pepper, 1/4 tsp garlic and onion powder
- Add seasoned chicken to oil and cook
- Add sofrito (optional- Cilantro, Culantro, mixture)
- Chop/dice/crush your pimentos, garlic, and olives. Add pimentos, garlic, and olives into the pot with chicken. Mix well.
- Add your oregano and cumin. Mix well.
- Add your tomato sauce. Mix well.
- Now, let your mixture sit for 2-5 min on a low heat ( you will see an orange beautiful color, as well you will be smelling that delicious aroma that surrounds your home by this point. Ah.hh they beauty of a few ingredients coming together as one)
- Add your rice, stir to combine all ingredients well, add your water.
- Taste for salt. I added 1/4 tsp salt
- Tear your cilantro and add to delicious mixture. Stir.
- Cover with lid, do NOT open! Let it sit for 20-30 min on a low heat. (Stove top 1-10, set at a low 2)
- After 30 min open lid and fluff your rice and chicken mixture.
