Chilaquiles Rojos

This recipe is one of my favorite recipes. If you are a fan of chile rojo, quick and simple recipes then this recipe is one to hold on to.

Chilaquiles (chee-lah-kee-lehs) are a dish you can make for breakfast, lunch, or dinner. Chilaquiles consist of corn tortillas that are smothered in a delicious chile sauce (red or green). The toppings are endless and up to the cook. I love to add a fried egg right on top.

There are also ones who love to enjoy this recipe after a long night of drinks (hangover).

Now lets get in the kitchen and make this easy and delicious recipe.


Ingredients:

  • 1 Cup Chile Rojo
  • 6 Corn Tortillas
  • 1-2 Cups Mozzarella Cheese
  • 6 Slices Bacon
  • Cilantro
  • Fried Eggs
  • Salt to taste

Lets get to cooking:

  1. Cook bacon until desired tenderness
  2. Remove bacon from pan, cut
  3. Cut corn tortillas into quarters, add to bacon fat cook until nice and crisp
  4. Add your chile rojo and mix until all tortillas are covered with chile
  5. Cut bacon into bite size pieces
  6. Add grated cheese to pan and mix
  7. Add cilantro, fried egg on top, and more bacon if you like

Waaa-laa all done!

A delicious crispy chicharon, when you take a bite you can hear that crisp, and pull apart pork that falls right off the bone. Not only will you enjoy it, so will your family. This pork shoulder is one to impress the family. My pork shoulder recipe is also great paired with any sides.

This recipe I have for you today is an easy recipe as the other recipes I have posted in my blog. The ingredients I will be using today are ingredients you can find in your pantry as well as your seasoning cabinet.

Now, how about we gather our ingredients and head on over to our stove top or should I say oven for today.


Ingredients:

  • 1TSP Sazon w/ Culantro & Achote

Ensalada De Papa | Potato Salad

Serves 4+

Potatoe Salad is a great recipe for every season as well as my Macaroni Salad. You can serve it in many ways. You can make a quick potato salad sandwich which is also very delicious and simple. This recipe will be one of your top recipes not only because it is easy to make, potato salad is also delicious!


Lets gather our ingredients:

  • 4 LG Potato
  • 1 Celery Stalk
  • 1 Cup Mayo
  • 2 Boiled Eggs
  • 1/2 Green Pepper
  • 1/2 Onion
  • 4 oz. Cheddar Cheese (optional)
  • 2 TBSP Mustard
  • 2 TBSP Olive Oil
  • Salt & Pepper

Let’s get to cooking:

  1. Peel and dice potato, add to boiling water until fork tender. Remove from water and set aside and let it cool
  2. Dice celery, green pepper, and onion.
  3. Add diced veggies to a pan/microwave (if using microwave, set to 20-30 sec. depending on how strong your microwave is) Add oil, salt, and pepper. Mix and cook until fork tender. Set aside and let it cool.
  4. When potato’s and veggies have cooled mix in bowl until well combined. Add diced boiled eggs, mayo, and mustard
  5. Let it sit in refrigerator until ready to eat

Waaa-la all done

Ensalada De Coditos | Macaroni Salad

Easy & Delicious, From Mi Casita To Your Casita

Serves 4+

*Make Ahead * 15-20 Min Recipe * Simple & Delicious

This recipe has been past on to me from my mother-in-law. This is a recipe great for every season of the year. Made with a few ingredients you may already have in your refrigerator and pantry. Not only will you enjoy this side, so will the kids and family. The taste will not be the only reason you come back, how easy it is made will keep you coming back for more and more.

Lets get right into it,


Gather all ingredients:

  • 1/2 of 16 oz. Box Macaroni Pasta
  • 1/2 Onion
  • 1/2 Green Pepper
  • 1/2 Red Apple
  • 1 Celery Stalk
  • 1 Cup Mayo
  • 1 TBSP Mustard
  • 2 TBSP Olive Oil
  • 4 oz. Cheddar Cheese
  • Salt & Pepper

Lets create:

  1. Cook pasta according to package, Set aside when done cooking. Let it cool down.
  2. Dice green pepper, celery, and onion. Add in a small bowl and drizzle with olive oil, salt, and pepper; mix. Cook until tender for about 5 min. Set aside to cool down.
  3. After pasta and veggies have cooled down dice cheese and apple. Set aside.
  4. In a large salad bowl add pasta, veggies, cheese, apple, mustard, and mayo. Mix until well combined.
  5. Taste for salt and pepper to your liking.

We are all finished and ready to serve.

This is a great recipe to make ahead of time if needed. Easy clean up to, you will not have any left over and your family will definitely be asking for more.

You can pair this with chicken, pork, beef, honestly with any type of meat or fish.

Holiday Turkey

Prep Time: 15 Minutes | Cook Time: 3-4 Hours

Happy Holidays

I have for you a recipe I use every year for the holidays or any day really. If you eat turkey all year long this is a great recipe to use. So, even if it is your first time or not join me in making this delicious turkey that will have everyone wanting left overs and maybe even taking some home with them leaving you with less clean up.

Here in our home we eat turkey once a year on Thanksgiving Day. It is our tradition to cook a delicious feast which includes of a delicious turkey, rice with pigeon peas, Ensalada De Papa | Potato Salad, Ensalada De Coditos | Macaroni Salad, and much more. Every year we may change our sides, one of them is not our turkey that is a fact, every year it is my duty to make sure our turkey is well seasoned with lots of flavor and love.

So, how about we set up in the kitchen and gather our ingredients and start the process so you can see what I mean when I say, “this is a delicious turkey and everyone will keep asking for more”.

Let’s get right in and start to marinate our turkey and getting it ready for the warm oven.


Let’s gather our ingredients.

  • 21 LB. Turkey
  • 1/2 Stick Butter
  • 2 Packets Sazon
  • 1 TBSP Adobo
  • 1 TBSP Oregano
  • 1/2 TSP Cumin
  • 8 Garlic
  • 4 TBSP Olive Oil
  • 1 TBSP Salt
  • 1 TBSP Pepper
  • 2 TBSP Vinagar
  • 1 Bunch Cilantro
  • 1 Green Bell Pepper Onion
  • 1 Bunch Culantro
  • 1 Onion

Let’s Start To Marinate:

  1. Place garlic, oil, and vinegar in molcajete/mortal (If you do not have a mortal/molcajete you can use blender/ food process) smash garlic
  2. Take adobo, sazon, oregano, cumin, salt, and pepper, add to garlic mixture
  3. Spread mixture all over the turkey
  4. Cut up butter into squares
  5. Lift skin up, tuck butter between turkey breast and skin
  6. Quarter bell peppers, onion, tear cilantro, culantro, and smash garlics
  7. Insert cut up veggies into the turkeys body cavity
  8. Mark X’s with knife, all around turkey and insert garlics

You are all done and ready to marinate your turkey over night which is what I do.


Let’s Cook:

After you marinate your turkey over night you can now set your oven to pre-heat to a 350’F/177’C which is set at a moderate heat.

I cook 3-4 hours or until it reaches a temperature of 165’F/74’C all around turkey.


We are all done and ready to enjoy!

Asado De Puerco

Mexican Pork Stew

Serves 4+

When you look up this recipe you will find there are so many different ways to make Asado de puerco/Mexican pork stew. If you love to search the web or books for recipes you may notice how all of us who love to cook or just cook in general we all use different ingredients and our techniques are not all the same.

I remember when I was younger we would ask my mother what she would be making for dinner before we left to school. She would only have to tell us, “asado” we would automatically know by dinner time someone was in trouble. She would make it so spicy all you were able to taste was the chile. We would now she was mad just by how spicy it was. Yet, I did not mind it, I enjoyed eating this dish.

The way my mother would make it was a little different than I make it today for my family. I added a few ingredients that with years I have put together to make a delicius dish my family will enjoy as I did when I was little. I always love eating this dish since I was little. The taste of the hot flour tortilla and the chile rojo dripping down your hand. It taste so delicious the only way to know is by trying it out.

Here I share with you my recipe and hope you enjoy and try it out.


Lets gather our ingredients:

  • 4 LBS Pork Shoulder
  • 2 Bone-In Pork Chops
  • 1 TBSP Adobo
  • 1 TSP Cumin
  • 1 TSP Oregano
  • 1 TBSP Complete Seasoning
  • 2 TBSP Manteca
  • 1 Basil Leaf
  • 2 Chile de Arbol
  • 5 Chile Guajillo
  • 1 1/2 Cup Chicken Stock
  • 1-2 TSP Pork Seasoning

Lets head to the stove top:

  1. Cut pork shoulder into bite size pieces, with pork chops you will be leaving some meat on bone.
  2. When all meat is cut into bite size pieces add complete seasoning, adobo, and oregano. Mix.
  3. Add manteca to pot and let it melt. When manteca is melted add pork and stir. Cook for 20 minutes stirring making sure it is not burning.
  4. Add pork seasoning. Mix.
  5. Add cumin and bay leaf. Mix.
  6. Add chile rojo. Mix.
  7. Let simmer for 2-5 min. Taste for salt. (If you like it more saucy add water/chicken stock)
  8. Cook until meat is tender.

For Chile Rojo:

  1. Cut open chilies and remove tail and seeds.
  2. In a pot boil water and add chilies.
  3. When chilies are tender and water has changed remove chilies from water and add to blender.
  4. In blender add chilies and chicken stock. Blend.

(If you do not have manteca you can use oil. If you do not have complete seasoning, adobo, or pork seasoning you can substitute it with salt. Please do not worry, it will also come out delicious)

A dish filled with so many delicious flavors

Today I have an easy recipe which is of course delicious. As always, you know I try to make it as easy as I can for both of us.

Arroz con pollo is a dish which originates from Spain and has made its way to the Caribbean cuisine, such as Puerto Rico. This dish dates back to the Eight Century when the Moors made their way into Spain. This dish’s ingredients have changed with time due to the different regions whom have made the dish a staple in their country and in their daily cuisine. Not only have the ingredients changed, with time this dish has had its name changed with every latin carribaen place it has touched. Places such as Dominican Republic have named it locrio de pollo. How interesting I may add.

These are just some intresting thoughts and research I wanted to share with you. As you know, I always enjoy reading and sharing a little history I learned about the ingredients we will be using for our recipes.

Now, lets cook!


Here are your ingredients:

  • 1+ Chicken Thighs boneless
  • 1 LG Potato
  • 1 TSP Oregano
  • 1 TSP Sazon
  • 1 TSP Adobo
  • 4 Garlic cloves
  • 1 Pimento roughly chopped
  • 1/4 TSP Cumin
  • 1/4 Cup Olives w/ pimentos
  • 1/2 TSP Black Pepper
  • 1/4 TSP Garlic & Onion Powder
  • 2 TBSP Tomato Sauce
  • 1 Cup Rice
  • 2 Cups Water
  • Cilantro

Directions:

  1. Cut chicken thighs in bite size pieces then season chicken with 1 tsp adobo, 1/4 tsp cumin, 1/4 tsp oregano, 1/2 tsp black pepper, 1/4 tsp garlic and onion powder
  2. Add seasoned chicken to oil and cook
  3. Add sofrito (optional- Cilantro, Culantro, mixture)
  4. Chop/dice/crush your pimentos, garlic, and olives. Add pimentos, garlic, and olives into the pot with chicken. Mix well.
  5. Add your oregano and cumin. Mix well.
  6. Add your tomato sauce. Mix well.
  7. Now, let your mixture sit for 2-5 min on a low heat ( you will see an orange beautiful color, as well you will be smelling that delicious aroma that surrounds your home by this point. Ah.hh they beauty of a few ingredients coming together as one)
  8. Add your rice, stir to combine all ingredients well, add your water.
  9. Taste for salt. I added 1/4 tsp salt
  10. Tear your cilantro and add to delicious mixture. Stir.
  11. Cover with lid, do NOT open! Let it sit for 20-30 min on a low heat. (Stove top 1-10, set at a low 2)
  12. After 30 min open lid and fluff your rice and chicken mixture.

Marinated Oven Baked Chicken My Way

“Home cooking is where the heart is”, I always say.

Today I bring you an easy and delicious recipe from mi casita to your casita. I really enjoy making this recipe and of course adding the seasonings I have grown to use in all of my home cooked meals.

This recipe is very simple yet delicious. Making this is a joy for me because I just take a few ingredients from my seasoning cabinet and BAM cooked in just a couple of hours.

I also wanted to mention before I get all the ingredients and directions posted. Look there have been many debates on this interesting topic, “washing your chicken before you cook it”.

I believe you should, yet there are many who say you can cause cross contamination due to rinsing your bird in the sink because of water splashing to other parts of your kitchen such as kitchen counters and kitchen sink. All my life I have seen it done this way, washing the bird before you cook it.

It is how I do it and if I am doing it wrong feel free to voice your opinion. I am open to discuss this interesting topic and learn other ways others cook and clean what they eat.

Now enough of my talking

Lets get to cooking.

Oven Baked Whole Chicken


Ingredients:

-100% Grass Fed Whole Chicken
-1TSP Sazon w/ Culantro & Achote
-1/4 TSP Cumin
-1 TSP Oregano
-1 TSP Adobo
-1 TBS Vinegar
-2 TBS Extra Virgin Olive Oil
-4 Garlic Cloves
-2 TBS Olives
-1/2 TSP Salt

Directions:

  1. Clean up your chicken, set aside
  2. Add garlic to your molcajete/ mortal and crush
  3. Add oil and the rest of the other seasonings
  4. You can remove the spine and smash chicken to flatten it out.
  5. Add marinate to your chicken
  6. Marinate for some hours or even over night
    After hours or over night. Pre-heat oven to 350’F
  7. Set in oven for 1-2 hrs

I am so excited, you are back here for more easy and delicious recipes from mi casita to your casita!

Today we will be reading a little about our famous hash dish. From all the research I have done I have come to learn there are many ways we have been taught to make this quick and easy dish. Every country has different recipes and so do our states here in America.

A little research on todays dish:

Hash is a dish which has chopped meat, potatoes, and onions. According to my research from: https://en.wikipedia.org/wiki/Hash_(food)#:~:text=Hash%20is%20a%20culinary%20dish,house%22%20or%20%22hashery.%22 It states Hash originated as a way to use leftovers. In the 1860’s cheap restaurants were called, “Hash Houses” or “Hashery”. During the Second World War hash had started to get popular in different countries such as Britain, France, and the U.S.A. due to having to ration food, specially fresh meat.

If you look online there are so many different recipes to make hash, It is so great and easy!

Now, why don’t we jump right in.

Here are my ingredients:

  • 1 LG Potato
  • 1 Tomato diced
  • 1/2 Poblano Pepper diced
  • 1/2 Onion diced
  • 1 TBS Oil
  • 1 7oz. Can Spam or 1/2 of 12oz. can
  • Salt & Pepper to taste

Lets get to cooking:

  1. Dice and prep all your ingredients
  2. Heat your pan and add your oil
  3. Add your diced potatoes, cook until nice and tender
  4. When your potatoes are tender add salt & pepper to your taste. Quick note: Spam has salt, taste before you add your salt.
  5. Add your diced spam
  6. Add your diced tomato, poblano peppers, and onions. Cook until your veggies are nice and tender
  7. If you are making a breakfast hash add your scrabbled eggs now

Here you have it a quick and easy hash made with delicious tender veggies and a simple can which is spam. I always say, ” work with what you have”.

“Easy and delicious, from mi casita to your casita”

CHILES RELLENOS

Vegetarian | Quick & Easy | Kid Friendly

I am so glad you are back and ready for another easy and delicious recipe, from mi casita to your casita.

For todays main ingredient we will be having Poblano Peppers. These peppers were originated from Puebla, Mexico. There are two colors to these peppers. They come in red and green, red being the spicier pepper.

The great thing about this pepper is, it is great for low carb meals, if you guys follow me on Instagram or YouTube you know I am trying out a new life style that works for me.

Low carbs, no sugars, and much more.

Well enough of me talking,

How about we review our ingredients:

  • 4 Poblano Peppers
  • 2 Eggs
  • Salt & Pepper
  • Mozzarella
  • Canola Oil

Lets get to cooking,

  1. In a comal or cast iron roast your poblano peppers
  2. Wrap roasted peppers in paper towel and then a plastic bag ( if you have foil paper that will work too)
  3. Let peppers sit while you make your egg mixture
  4. Separate yolks from egg whites
  5. In your stand mixer whip your egg whites until fluffy (you can use a hand mixer)
  6. Fold in your egg yolks one at a time into your egg whites
  7. Add salt and pepper
  8. Cut block of cheese in squares as much as you like ( I like mine cheese, yummm!)
  9. Remove poblano from bag and peel as mush of the skin out
  10. Cut poblano thru center and add your cheese ( you can remove seeds if you do not like it spicy, I leave them in)
  11. Add poblano to egg mixture
  12. Add egg to hot oil and cook until golden brown

Here you have it a quick and easy chile relleno made with delicious ingredients. I always say, ” work with what you have”.
