Let’s get to cooking:
Add oil to a caldero/cauldron. In with the sofrito ( https://abuscafe.food.blog/2021/03/03/sofrito/ ) mix cook for 1-2 min. Place ham seasoning, mix well. Take sazón mix until well combined.
Take can of gandules with liquid. Add to mixture, let it simmer for 4-5 min. In go the olives.
Proceed with the rice, mix until well combined. Add water, stir, and taste for salt to your liking.
Simmer until water has reduced, mix, and cover for 25-30 min. Stir and enjoy
Note: When it starts to boil and water is almost reduce to nothing mix and reduce heat to a low heat about a 1-2 (for electric stoves)
You will COVER with lid and let it sit for 20-25 min without opening lid.
After 20-25 min take a fork and fluff the rice.

Are you looking for and easy recipe that has no meat and is easy to clean up afterwards? I have been looking around here and there trying to find an easy recipe that would be worthy enough for my picky family to want to try.
I came across a recipe online and it gave me a great idea. I have always loved to eat lentils growing up, it was one of my favorite grains to eat, I would always ask to eat them as well as potatoes. This brought me to an idea of using lentils to my everyday meals or at least figuring out what else I can create and bring to my dinner table that all will like and enjoy.
This recipe is a mixture of lentils and a great all time favorite recipe combined together that they will all love.
Let’s dive right into the ingredients and recipe.
You will need:
2 Tbsp. Oil
1 Cup Lentils
1 Onion diced
3 Garlic minced
1 Bell pepper diced
1 Tsp. A1 Sauce
1 Cup Broth
1 Cup Tomato sauce
1/2 Cup Ketchup
3 Tbsp. Tomato paste
2 Tbsp. Brown Sugar
1 Tsp Chile Powder
1/2 tsp Ground Mustard
1 Tbsp. Apple Cider Vinegar
I Cup Water
Salt & Pepper to taste
Lets bring it all together
In a warm skillet add oil, peppers, and onions. Cook for 5-8 minutes until veggies are tender. In go the water, lentils, broth, and garlic.
Bring to a simmer and cover for 25-30 min. Keep an eye on them making sure water does not reduce all the way. Add more water if needed until lentils have reached a tender feel (not mushy)
After lentils are ready and tender, go ahead and mix in tomato sauce, paste, and combine well. Mix in brown sugar, chili, mustard, cider, and water. simmer for 10-15 min on a med/low heat. Lastly, taste for salt and pepper.
Enjoy with your favorite toppings as well as your favorite vegan hamburger bread or a a rice patty, the options are endless.
Start by adding your olive oil to a deep skillet, when hot add mushrooms. Cook for 1-5 min add Sofrito mix until well combined, adding garlic to get that nice aroma going.
Now incorporate the seasonings which are sazon, cumin, and oregano, mix until well combined
In go the tomatoes smash if desired. Proceed to adding carrots and potatoes, mix well.
Lastly, in go the olives, water, and salt to taste if desired and want to add salt. Cook for 10-15 min or until your veggies have reached your your desired texture; potatoes are nice and tender.
Here is a recipe you do not need to feel guilty if you go in for seconds. It is filled with great flavors that will have your home smelling great. The family will be wondering what is going on in that kitchen.
This recipe is great to pair with white rice and my stewed beans, either way you choose you will not be disappointed.

*Make Ahead * 15-20 Min Recipe * Simple & Delicious
This recipe has been past on to me from my mother-in-law. This is a recipe great for every season of the year. Made with a few ingredients you may already have in your refrigerator and pantry. Not only will you enjoy this side, so will the kids and family. The taste will not be the only reason you come back, how easy it is made will keep you coming back for more and more.
Lets get right into it,
Gather all ingredients:
1/2 of 16 oz. Box Macaroni Pasta
1/2 Onion
1/2 Green Pepper
1/2 Red Apple
1 Celery Stalk
1 Cup Mayo
1 TBSP Mustard
2 TBSP Olive Oil
4 oz. Cheddar Cheese
Salt & Pepper
Lets create:
Cook pasta according to package, Set aside when done cooking. Let it cool down.
Dice green pepper, celery, and onion. Add in a small bowl and drizzle with olive oil, salt, and pepper; mix. Cook until tender for about 5 min. Set aside to cool down.
After pasta and veggies have cooled down dice cheese and apple. Set aside.
In a large salad bowl add pasta, veggies, cheese, apple, mustard, and mayo. Mix until well combined.
Taste for salt and pepper to your liking.
We are all finished and ready to serve.
This is a great recipe to make ahead of time if needed. Easy clean up to, you will not have any left over and your family will definitely be asking for more.
You can pair this with chicken, pork, beef, honestly with any type of meat or fish.

I have for you a recipe I use every year for the holidays or any day really. If you eat turkey all year long this is a great recipe to use. So, even if it is your first time or not join me in making this delicious turkey that will have everyone wanting left overs and maybe even taking some home with them leaving you with less clean up.
Here in our home we eat turkey once a year on Thanksgiving Day. It is our tradition to cook a delicious feast which includes of a delicious turkey, rice with pigeon peas, Ensalada De Papa | Potato Salad, Ensalada De Coditos | Macaroni Salad, and much more. Every year we may change our sides, one of them is not our turkey that is a fact, every year it is my duty to make sure our turkey is well seasoned with lots of flavor and love.
So, how about we set up in the kitchen and gather our ingredients and start the process so you can see what I mean when I say, “this is a delicious turkey and everyone will keep asking for more”.
Let’s get right in and start to marinate our turkey and getting it ready for the warm oven.
Let’s gather our ingredients.
21 LB. Turkey
1/2 Stick Butter
2 Packets Sazon
1 TBSP Adobo
1 TBSP Oregano
1/2 TSP Cumin
8 Garlic
4 TBSP Olive Oil
1 TBSP Salt
1 TBSP Pepper
2 TBSP Vinagar
1 Bunch Cilantro
1 Green Bell Pepper Onion
1 Bunch Culantro
1 Onion
Let’s Start To Marinate:
Place garlic, oil, and vinegar in molcajete/mortal (If you do not have a mortal/molcajete you can use blender/ food process) smash garlic
Take adobo, sazon, oregano, cumin, salt, and pepper, add to garlic mixture
Spread mixture all over the turkey
Cut up butter into squares
Lift skin up, tuck butter between turkey breast and skin
Quarter bell peppers, onion, tear cilantro, culantro, and smash garlics
Insert cut up veggies into the turkeys body cavity
Mark X’s with knife, all around turkey and insert garlics
You are all done and ready to marinate your turkey over night which is what I do.
Let’s Cook:
After you marinate your turkey over night you can now set your oven to pre-heat to a 350’F/177’C which is set at a moderate heat.
I cook 3-4 hours or until it reaches a temperature of 165’F/74’C all around turkey.

Today we will be reading a little about our famous hash dish. From all the research I have done I have come to learn there are many ways we have been taught to make this quick and easy dish. Every country has different recipes and so do our states here in America.
A little research on todays dish:
Hash is a dish which has chopped meat, potatoes, and onions. According to my research from: https://en.wikipedia.org/wiki/Hash_(food)#:~:text=Hash%20is%20a%20culinary%20dish,house%22%20or%20%22hashery.%22 It states Hash originated as a way to use leftovers. In the 1860’s cheap restaurants were called, “Hash Houses” or “Hashery”. During the Second World War hash had started to get popular in different countries such as Britain, France, and the U.S.A. due to having to ration food, specially fresh meat.
If you look online there are so many different recipes to make hash, It is so great and easy!
Now, why don’t we jump right in.
Here are my ingredients:
1 LG Potato
1 Tomato diced
1/2 Poblano Pepper diced
1/2 Onion diced
1 TBS Oil
1 7oz. Can Spam or 1/2 of 12oz. can
Salt & Pepper to taste
Lets get to cooking:
Dice and prep all your ingredients
Heat your pan and add your oil
Add your diced potatoes, cook until nice and tender
When your potatoes are tender add salt & pepper to your taste. Quick note:Spam has salt, taste before you add your salt.
Add your diced spam
Add your diced tomato, poblano peppers, and onions. Cook until your veggies are nice and tender
If you are making a breakfast hash add your scrabbled eggs now
Here you have it a quick and easy hash made with delicious tender veggies and a simple can which is spam. I always say, ” work with what you have”.
