“Easy and Delicious, From Mi Casita To Your Casita”

For this recipe you will be using ingredients you would already have in your kitchen. I really enjoy this recipe due to its simplicity. Not only is this a simple recipe, this recipe is delicious!
There have been many times when I make this recipe at home and I choose to eat it just as it is. Start by placing oil in a warm pot. Take sofrito and cook for about 1-2 minutes on medium heat.
Take Ham seasoning add it with the sofrito. Mix until well incorporated. Go ahead and add the seasoning packet.
In with the tomato sauce. Mix, mix, mix. Add your cumin and oregano. Mix. In go the beans. Mix. Add pumpkin, sausage, potato, cilantro, mix.
Lastly, add water and taste for salt.
Note: When it starts to boil reduce heat to a low heat about a 1-2 (for electric stoves) and let it simmer.

*Note: Salt is to taste as well as adding cubed ham.
Let’s get to cooking:
Add oil to a caldero/cauldron. In with the sofrito ( https://abuscafe.food.blog/2021/03/03/sofrito/ ) mix cook for 1-2 min. Place ham seasoning, mix well. Take sazón mix until well combined.
Take can of gandules with liquid. Add to mixture, let it simmer for 4-5 min. In go the olives.
Proceed with the rice, mix until well combined. Add water, stir, and taste for salt to your liking.
Simmer until water has reduced, mix, and cover for 25-30 min. Stir and enjoy
Note: When it starts to boil and water is almost reduce to nothing mix and reduce heat to a low heat about a 1-2 (for electric stoves)
You will COVER with lid and let it sit for 20-25 min without opening lid.
After 20-25 min take a fork and fluff the rice.

I came across a recipe online and it gave me a great idea. I have always loved to eat lentils growing up, it was one of my favorite grains to eat, I would always ask to eat them as well as potatoes. This brought me to an idea of using lentils to my everyday meals or at least figuring out what else I can create and bring to my dinner table that all will like and enjoy.
This recipe is a mixture of lentils and a great all time favorite recipe combined together that they will all love.
Let’s dive right into the ingredients and recipe.
You will need:
2 Tbsp. Oil
1 Cup Lentils
1 Onion diced
3 Garlic minced
1 Bell pepper diced
1 Tsp. A1 Sauce
1 Cup Broth
1 Cup Tomato sauce
1/2 Cup Ketchup
3 Tbsp. Tomato paste
2 Tbsp. Brown Sugar
1 Tsp Chile Powder
1/2 tsp Ground Mustard
1 Tbsp. Apple Cider Vinegar
I Cup Water
Salt & Pepper to taste
Lets bring it all together
In a warm skillet add oil, peppers, and onions. Cook for 5-8 minutes until veggies are tender. In go the water, lentils, broth, and garlic.
Bring to a simmer and cover for 25-30 min. Keep an eye on them making sure water does not reduce all the way. Add more water if needed until lentils have reached a tender feel (not mushy)
After lentils are ready and tender, go ahead and mix in tomato sauce, paste, and combine well. Mix in brown sugar, chili, mustard, cider, and water. simmer for 10-15 min on a med/low heat. Lastly, taste for salt and pepper.
Enjoy with your favorite toppings as well as your favorite vegan hamburger bread or a a rice patty, the options are endless.

White rice (long | Med Grain)
Oil (Virgin | Canola)
Water
Salt to taste
Let’s bring it all together
Here is where it gets a little confusing; have no fear we will get through this
Take 1 cup of rice and add it to your rice maker, pot, cauldron, or kaldero
Add 1-2 tablespoon of oil & salt, mix until nice and combined

You will COVER with lid and let it sit for 20-25 min without opening lid.
Fluff your rice after 20-25 min with a fork
You are all done and ready to serve and enjoy with your loved ones.
Start by adding your olive oil to a deep skillet, when hot add mushrooms. Cook for 1-5 min add Sofrito mix until well combined, adding garlic to get that nice aroma going.
Now incorporate the seasonings which are sazon, cumin, and oregano, mix until well combined
In go the tomatoes smash if desired. Proceed to adding carrots and potatoes, mix well.
Lastly, in go the olives, water, and salt to taste if desired and want to add salt. Cook for 10-15 min or until your veggies have reached your your desired texture; potatoes are nice and tender.
Here is a recipe you do not need to feel guilty if you go in for seconds. It is filled with great flavors that will have your home smelling great. The family will be wondering what is going on in that kitchen.

Today I have an easy recipe which is of course delicious. As always, you know I try to make it as easy as I can for both of us.
Arroz con pollo is a dish which originates from Spain and has made its way to the Caribbean cuisine, such as Puerto Rico. This dish dates back to the Eight Century when the Moors made their way into Spain. This dish’s ingredients have changed with time due to the different regions whom have made the dish a staple in their country and in their daily cuisine. Not only have the ingredients changed, with time this dish has had its name changed with every latin carribaen place it has touched. Places such as Dominican Republic have named it locrio de pollo. How interesting I may add.
These are just some intresting thoughts and research I wanted to share with you. As you know, I always enjoy reading and sharing a little history I learned about the ingredients we will be using for our recipes.
Now, lets cook!
Here are your ingredients:
1+ Chicken Thighs boneless
1 LG Potato
1 TSP Oregano
1 TSP Sazon
1 TSP Adobo
4 Garlic cloves
1 Pimento roughly chopped
1/4 TSP Cumin
1/4 Cup Olives w/ pimentos
1/2 TSP Black Pepper
1/4 TSP Garlic & Onion Powder
2 TBSP Tomato Sauce
1 Cup Rice
2 Cups Water
Cilantro
Directions:
Cut chicken thighs in bite size pieces then season chicken with 1 tsp adobo, 1/4 tsp cumin, 1/4 tsp oregano, 1/2 tsp black pepper, 1/4 tsp garlic and onion powder
Chop/dice/crush your pimentos, garlic, and olives. Add pimentos, garlic, and olives into the pot with chicken. Mix well.
Add your oregano and cumin. Mix well.
Add your tomato sauce. Mix well.
Now, let your mixture sit for 2-5 min on a low heat ( you will see an orange beautiful color, as well you will be smelling that delicious aroma that surrounds your home by this point. Ah.hh they beauty of a few ingredients coming together as one)
Add your rice, stir to combine all ingredients well, add your water.
Taste for salt. I added 1/4 tsp salt
Tear your cilantro and add to delicious mixture. Stir.
Cover with lid, do NOT open! Let it sit for 20-30 min on a low heat. (Stove top 1-10, set at a low 2)
After 30 min open lid and fluff your rice and chicken mixture.

Today we will be reading a little about our famous hash dish. From all the research I have done I have come to learn there are many ways we have been taught to make this quick and easy dish. Every country has different recipes and so do our states here in America.
A little research on todays dish:
Hash is a dish which has chopped meat, potatoes, and onions. According to my research from: https://en.wikipedia.org/wiki/Hash_(food)#:~:text=Hash%20is%20a%20culinary%20dish,house%22%20or%20%22hashery.%22 It states Hash originated as a way to use leftovers. In the 1860’s cheap restaurants were called, “Hash Houses” or “Hashery”. During the Second World War hash had started to get popular in different countries such as Britain, France, and the U.S.A. due to having to ration food, specially fresh meat.
If you look online there are so many different recipes to make hash, It is so great and easy!
Now, why don’t we jump right in.
Here are my ingredients:
1 LG Potato
1 Tomato diced
1/2 Poblano Pepper diced
1/2 Onion diced
1 TBS Oil
1 7oz. Can Spam or 1/2 of 12oz. can
Salt & Pepper to taste
Lets get to cooking:
Dice and prep all your ingredients
Heat your pan and add your oil
Add your diced potatoes, cook until nice and tender
When your potatoes are tender add salt & pepper to your taste. Quick note:Spam has salt, taste before you add your salt.
Add your diced spam
Add your diced tomato, poblano peppers, and onions. Cook until your veggies are nice and tender
If you are making a breakfast hash add your scrabbled eggs now
Here you have it a quick and easy hash made with delicious tender veggies and a simple can which is spam. I always say, ” work with what you have”.
Charro beans are a dish originated from the Northern side of Mexico. It is a big pot of deliciousness, it is a broth made from slow cooked onions, tomatoes, jalapeños and other ingredients listed below.
This recipe is made with fresh pinto beans. The way things are now you might have canned pinto beans hiding in your pantry and let me tell you those are great too. Don’t you worry, you use what you have available.
Lets jump right in.
Ingredientes:
1 Tomato
1 Onion
1 Jalapeño
3 Springs of Cilantro
2 Cups Chicharrón (pork skins)
5 Bacon Slices
1 pk Sazón con Culantro & Achote
8 oz. Cooked Ham
19.75 oz. Can Pinto Beans
Lets get to cooking:
Dice your veggies, set aside
Dice your bacon, ham, & chicharrón
Cook your bacon until nice and brown
Add your ham
Cook ham for 2-3 min.
Add onion and poblano pepper, cook untill onions are tender
Add tomato, cook for 5 min
Add your pinto beans with liquid
Add sazón
You can add chicharrón now
Add water and taste for salt and pepper
Cover and simmer for 10 min until chicharrón is nice and tender
